The aspect is very original and so inviting that it is difficult to avoid the temptation! Red with green and yellow spots (pistachio nuts and pine-kernels), it has a very lean meat, just like all wild boar salamis.
To be eaten alone and rigorously sliced by hand!

This salami is inspired by the classic Pork Finocchiona, that is already appreciated by the finest palates! Adding some original touches, we have created our Fennel Wild Boar Salami, an excellent product which is as good as the classical Finocchiona. Particularly lean, with an intense perfume, this salami is marked by the typical fennel flavour. Better if sliced by hand. Composed by pork and wild boar.

SEMI-RIPENED RED PECORINO CHEESE OF SAN GIMIGNANO
ENG . This straw yellow semi-hard cheese has a perfect balance between a relatively short period of ripening and an intense fragrance. Its surface is treated with tomato concentrate.
Very good with pears and with honey.

ENG . White cheese with a tangy taste. Black Pecorino surface is treated with olive oil, that gives the rind its typical black colour.
Excellent with honey, and fig jam, perfect foil to Salumi and raw vegetables pinzimonio (a sauce made with olive oil, vinegar, salt and pepper into vegetables are dipped)
